carrot cake latte

today I made a carrot cake latte! I’ve always wanted to try a carrot cake drink since carrot cake is my favorite. but I’ve never seen one in a shop near me, so I decided to improvise at home.

this drink has three parts: a carrot infused simple syrup, a spiced vanilla milk, and a cream cheese foam topping. I made a hot latte initially, but I think this would work really well as an iced latte too!

INSTRUCTIONS:

carrot simple syrup (makes enough for several drinks): combine 1 c granulated sugar, 1 c water, and 2 c grated carrot. simmer on low until sugar is dissolved and carrot flavor is imparted into the syrup (I recommend tasting as you go), approximately 30 mins. strain.

spiced frothed vanilla milk (stovetop version): combine 1 c milk of choice, 1 tbsp sugar, 1 tsp ground cinnamon, and 1/4 tsp ground nutmeg. simmer until milk reaches approximately 140 degrees F. remove from heat and stir in 1 tbsp vanilla extract. froth (I use this rechargable milk frother).

cream cheese foam topping: I followed these instructions from Low Carbing Asian blog!

to assemble: combine 1 (or 2) shots espresso, carrot simple syrup to taste, and spiced frothed vanilla milk. top with cream cheese foam topping. I garnished my latte with carrot stars, chopped walnuts, and more ground nutmeg.
